Feta salad with walnuts and pear

Ingredients
1 large parsnip
1 pear
1 bag of arugula (70 g)
150 g feta cheese
1 avocado
1 large scoop walnuts
1 large scoop haricot verts
1 dl white quinoa
1 cube vegetable broth
Olive oil
Flake salt
Dressing:
5 Table spoons olive oil
1 tea spoon white vine vinegar
1 table spoon honey
A squeeze of lemon
0,5 teaspoon salt
Instructions
Heat the oven to 200 degrees
Peel and cut the parsnips into sticks. Place on baking paper and drizzle with olive oil and salt. Place in the oven for 20 minutes, turning halfway through.
Boil the quinoa with the vegetable broth
Arrange arugula and haricot vert in deep plates. Slice pears and avocados.
Mix together the ingredients for the dressing and season with salt.
Top the salad with quinoa, parsnips and crumble over the feta cheese.
Drizzle over the dressing and top with the walnuts
