Chocolate energy bars
Do you need a healthy snack before your workout? Or maybe just in need of that extra energy during the day? These high in fiber bars will have you feeling energized and ready to take on the rest of your day. The recipe for these heavenly chocolate bars comes from Amanda Jenninger, who is specializing in healthy yet delicious recipes that will have your body and mind thanking you.

Service size: Approx. 10 bars
Ingredients:
2 dl oatmeal
1.5 dl cashews
0.5 dl flaxseeds
1 dl chocolate buttons
1 tbsp coconut sugar (optional)
3 tbsp maple syrup
2 tbsp melted coconut oil
1 tablespoon almond butter
0.5 tsp salt + flake salt topping
Instructions
Set the oven to 150 degrees.
Mix all dry ingredients in a bowl with 0.75 dl of the chocolate buttons (save the rest for topping).
Mix melted coconut oil, almond butter, coconut sugar and maple syrup in another bowl. Pour over the dry ingredients and mix thoroughly.
Take out a bread form and put in baking paper. Pour over the batter and press it down evenly into the mold with a spatula.
Put in the oven for about 28-30 minutes (it shouldn't get much color at the top) and then leave to cool for at least 30 minutes.
Mix the last chocolate with a small dollop of coconut oil and use a spoon to sprinkle over the bars. Then leave in the fridge for at least 1 hour, until they are completely cold, and then cut into bars of your choice.
