Winter lentil stew

This lentil stew is one of my favorites and is very easy to do. It is super healthy and will give you so much nutrition and energy. It is vegan friendly, except for the optional sauce but you can easily add a vegan yogurt if you prefer.

Serving: 2 people
Time: 25-30 minutes

Ingredients:

2 cups Lentil beans

1 can Coconut milk

1 tbsp vegetable broth

1 tbsp Tomatpuré

1x Carrot

1x Onion

1x Tomato

2 cm Ginger

1x Garlic

1x Chilli

Handful of Spinach

Spices:

0.5 tsp Paprika

0.5 tsp Cumin

0.5 tsp Turmeric

A little dash of cinnamon is optional

Pinch of salt and pepper


Instructions

  1. Cut all the ingredients down to small pieces.

  2. Heat a pan with olive oil

  3. Fry the onion for a few minutes

  4. Add tomatoes, carrot, chili, ginger, and a little salt and cook for a few minutes. 

  5. Add the spices, tomatpuré, and 1/2 garlic. Add olive oil if needed and cook for another 1-2 minutes. 

  6. Add 1,5 dl of water and let it cook.

  7. Wash the lentil beans with cold water. Add them to the pan and also ½ can of coconut milk and vegetable broth. Cook it for 7-8 minutes until the sauce is thicker.  Add salt and pepper as you wish. 

  8. Add the spinach and let it cook for a few minutes until it has softened. 

  9. Eat with bulgur, brown rice or cooked sweet potatoes in the oven.

  10. Top it with coriander if you like

Optional cucumber sauce on the side

Ingredients

2 dl Yogurt (or vegan yogurt)

½ Cucumber

½ Garlic

Salt and pepper

Instructions

  1. Before mixing the cucumber make sure to squeeze as much water out as possible

  2. Mix it all together
