Carrot soup recipe
Ingredients:
5 Carrots
1 Onion
1 whole head of garlic
1,5 dl Coconut milk (or other preferred liquid/cream)
2 dl vegetable broth
Olive oil
Salt
Pepper
Chili flakes
Fresh parsley leaves
Instructions:
Put the oven to 200 C.
Cut carrots and the onion into small pieces. Place in an oven pan. Cut the garlic at the top and place it together with Parsley in the pan. Drizzle olive oil on top.
Place in the oven for 20 minutes.
Boil vegetable broth.
Take out the pan from the oven. Pour all the ingredients from the oven pan into a blender together with the coconut milk (or another preferred liquid) and vegetable broth.
Use the preferred amount of salt, pepper, and chili flakes.
Top off with basil and drizzle some olive oil. Enjoy!
